Raw Pad Thai

This dish not only has an authentic pad thai taste, sea vegetables such as kelp are an excellent source of vitamins, minerals and amino acids to fuel your body.



The Sauce

1 Cup Raw Almond Butter

1/2 Cup Fresh Squeezed Lime Juice

2-3 Tbsp Unpasterized Apple Cider Vinegar

3-5 Cloves Garlic, minced

1/4 Cup Red Onion, chopped 

2 Tbsp Fresh Ginger, minced

1-2 Thai Chilies, to taste

1/2 Carrot Juice, juiced from fresh carrots

1/2 - 3/4 Cup Water


The Noodles

2 Pkgs Kelp Noodles

1-2 Red Peppers, sliced

1-2 Green Onions, sliced

1/2 Cup Fresh Cilantro, chopped

1/2 Cup Fresh Thai Basil, chopped

1/2 Cup Almonds, roughly chopped



1.  Rinse the kelp noodles and drain in strainer


2. For the sauce, blend all ingredients in blender or food processor, add water until desired creamy consistency acheived


3.  Add the peppers and green onions to the noodles and coat noodles with sauce 


4.  Enjoy right away or leave for about a half hour or hour for the sauce to soak into the noodles


5.  Place noodles on plate and sprinkle cilantro, basil and almonds on top of noodles



  • The sauce will be thick so if you don't have a vita mix I would recommend to make sauce in a food processer and then you can transfer to blender if needed to acheive desired consistency
