    When you bite into these delicious chocolate and chewy brownies your mouth will explode with chocolate sensation and cool minty freshness.  Not too mention the amazing antioxidants that you will be filling your body with, with every bite.

     

    INGREDIENTS

    The Brownie

    2 Cups Medjool Dates, pitts removed

    2 Cups Raw Walnuts, whole 

    3/4 Cup Cacoa Powder 

    1/2 Cup Dried Cranberries, unsweetened 

     

    The Topping

    1 Cup Raw Cashews, soaked (soak overnight)

    1/4 Cup Water

    2-3 Tbsp Coconut Oil, melted

    1 Tsp Agave Syrup 

    1 Tsp Peppermint Extract

     

    DIRECTIONS

    1.  Chop walnuts in food processor until fine (crumb like), add half the dates blend, add remaining dates until dough like batter forms

     

    2.  Add half of the cacao powder and blend, add remaining cacao powder and blend

     

    3.  Add in cranberries and fold into dough

     

    4.  Tranfer dough into 8 x 8 square pan and spread in pan and chill in fridge for a couple of hours

     

    5.  Drain cashews place in blender , add in water and puree

     

    6.  Add in coconut oil and blend

     

    7.  Add agave and peppermint extract and blend

     

    8.  Pour peppermint cashew cream into a bakers plastic bottle with narrow tip

     

    9.  Remove brownies from fridge and cut into squares

     

    10.  Drizzle peppermint cashew cream on top of brownies

     

    FBR TIPS

    • Don't over blend the cranberries into dough, you want the cranberries to remain whole
