I love the flavours of cranberry and rosemary together, they are a match made in "cream cheese" heaven. Enjoy on your favourite raw cracker.
INGREDIENTS
The "Cream Cheese"
2 Cups Cashews, soaked overnight in water
3/4 Cup Warm Water
1 Tsp Probiotic powder - see FBR Tips below
1/2 Lemon, juiced
1-2 Tbsp Nutritional Yeast
1/4-1/2 Cup Dried Cranberries, unsweetened
1-2 Tbsp Fresh Rosemary, chopped into tiny pieces
The Topping
Sprig of Fresh Rosemary
The Directions

Rinse soaked cashews and place in blender, add probiotic powder and warm water and blend until smooth

Add in lemon juice and blend

Place strainer or seive on plate

Place cheese cloth or nut milk bag into strainer (I use nut milk bag and strainer)

Spoon mixture into cheese cloth or nut milk bag

Make sure mixture is covered and place a plate on top strainer

Set aside for 24hrs - at room tempeture or slightly warmer place

Place "cheese" into fold and fold in nutritional yeast, cranberries and rosemary

Ideally set a side for a day to let it firm up

Spoon mixture into a bowl and top with Rosemary Sprig
FBR Tip

You can get probiotic in powder form or capsule form, 1 teaspoon of probiotic powder is approx 10 capsules. You should never use the whole capsule, you have to remove the powder from the capsule. I would recommend powder form as it is easier then having to breakdown the capsules

Nutritional yeast has a very distinct flavour so add a little bit at a time so it doesn't over power the "cheese"

I have a dehyrator, so I placed the mixture in the dehyrator. You can also put it in a microwave if you have one
